We are inspired by nature and changing seasons, hence our cuisine is rich in flavours of the season which blend with spices from the furthest corners of the world.
Our daily work proves that running a restaurant and following zero waste philosophy is possible. In the hotel you will not find plastic straws or soft drinks in plastic bottles. Our chefs do wonders giving second life to lemon zest or nut shells.

I started my cooking adventure over twenty years ago when I was acquired knowledge which I have been applying in the kitchen until today and I never take short cuts. In my cooking it is the old Polish cuisine that reigns and which I practice in its modern variety.

My work is a combination of passion and craft. I try to learn something new every day and hand this knowledge down. I absolutely love the beauty of produce, its freshness, origin and use. Anyway, it is the produce that everything starts with in the kitchen. I do believe that the day of a chef must start with a perfect Mise en place. I am particularly inspired by the work of Anthony Bourdain.
