Our menu is created with the love for cooking and nature, and with the changing seasons which are the main inspiration for the card.
Sensuous pleasure of tasting, carefulness while eating, celebration of meals, cooking with love and respect for nature and supporting organic farming are the overriding values which guide us while preparing meals for our guests.
We are inspired by nature and changing seasons, hence our cuisine is rich in flavours of the season which blend with spices from the furthest corners of the world.
Our daily work proves that running a restaurant and following zero waste philosophy is possible. In the hotel you will not find plastic straws or soft drinks in plastic bottles. Our chefs do wonders giving second life to lemon zest or nut shells.
Fruit and vegetables from organic farms, produce supplied by local farmers and always trusted source are included in our menu at all times. We place equal value on flavour and nutrients of our dishes as we do on values guiding our suppliers.
See menuI started my cooking adventure over twenty years ago when I was acquired knowledge which I have been applying in the kitchen until today and I never take short cuts. In my cooking it is the old Polish cuisine that reigns and which I practice in its modern variety.

My work is a combination of passion and craft. I try to learn something new every day and hand this knowledge down. I absolutely love the beauty of produce, its freshness, origin and use. Anyway, it is the produce that everything starts with in the kitchen. I do believe that the day of a chef must start with a perfect Mise en place. I am particularly inspired by the work of Anthony Bourdain.
